
We were thrilled to discover the excellent Shuttleworth Malbranche, who produce the finest quality foie gras, paté and rillettes de canard by traditional methods. We love them all but were particularly taken with the rillettes, which makes a luxurious and simple supper served with toast and butter. Perfect presents too. Delivery is £6.80.

We get asked why our foie gras comes in a jar rather than a tin; this is because it is foie gras entier, rather than bloc. Foie gras entire is whole “pressed” liver whilst bloc is creamed together with water and seasonings.

Rillettes is a traditional French method of preparing and preserving meat. Our Rillettes are made of the finest duck meat and seasoned duck fat. The duck is first prepared using the confit method, it is simmered in spices, juices, and fat, and left to soak up as much flavour as possible. It is traditionally served chilled with freshly baked toasted bread.

Hunting wild boar is a traditional country pursuit in France. The meat has stronger flavour than pork and makes a perfect rich pate. Wild boar pate is most commonly availiable in France during autumn and winter as this is the hunting season. Our wild boar pate is seasoned with white wine, juniper berries and combined with chicken livers for a delicious creamy texture.
