Griddled Asparagus With Pancetta And A Poached Egg

Griddling asparagus gives it a lovely charred flavour and brings out some extra sweetness. If you aren't happy about poaching eggs, you can always soft boil them and serve them peeled and cut in half on top.

Serves 4

Ingredients

Griddled Asparagus With Pancetta And A Poached Egg

700g Asparagus
8 slices pancetta
4 free-range eggs
Olive oil
Parmesan
Salt and pepper

Method

1. Steam the asparagus for 2 minutes or so or until just tender. Don't cook it too long as you're going to be griddling it too.
2. Meanwhile, start heating a griddle pan, it needs to be very hot. Put on a pot of water to poach or boil the eggs in.
3. Lightly coat the steamed asparagus spears in olive oil and season with salt and pepper.
4. Quickly griddle the asparagus and pancetta on the hot griddle pan. Remove to a plate.
5. Poach or boil the eggs.
6. Serve the asparagus with the crisp pancetta and an egg on top. Shave over some parmesan to serve.

Venison is very good for your health. High in protein, like beef, but much lower in fat. It is also full of vitamin B, iron, phosphorous, zinc and selenium. (If you know what all those are).

Cooking wise, you can treat it like beef, the less exercised muscles can be cooked quickly and served pink. The shoulder suits a slow, gentle braise. The younger the deer, the more tender the meat will be. However, don't disregard an older beast, for once marinated and cooked slowly, it will taste delicious.

The gamey flavour goes well with sweet flavours, such as the sherry in the Pedro Ximinez recipe, otherwise, redcurrant jelly or port are excellent, as are rosemary and juniper, sweet carrots or squash.

In Britain we have several types of deer, the most common being Red deer, Fallow and Roe, but you can also find Sika and Muntjac. They are all very different and very delicious.
